شاشة التجميع (Expeditor) هي التي تمنع المشكلة الأشهر: وصول السلطة قبل المشوي بعشر دقائق. هي الشاشة الوحيدة التي ترى الطلب كاملاً وتقرّر متى تُرسل الإشارة لكل محطة.
ضبط أزمنة التحضير (Course Timing)
لكل صنف زمن تحضير معياري. الفكرة ليست بدء كل الأصناف معاً، بل إنهاؤها معاً. إذا كان المشوي يحتاج 12 دقيقة والبطاطس 4 دقائق، تبدأ البطاطس بعد 8 دقائق من بدء المشوي.
لضبط ذلك عملياً:
قِس الأزمنة الحقيقية أولاًلا تستخدم أرقاماً افتراضية. قِس عشرة أطباق من كل صنف رئيسي في ذروة حقيقية، وخذ الوسيط لا المتوسط (طبق واحد متأخّر يشوّه المتوسط).
أدخل الأزمنة في النظام لكل صنفثم اضبط النظام ليطلق كل محطة في وقتها بحيث تلتقي الأصناف عند التمرير.
اضبط عتبات التنبيهأخضر ضمن الزمن المعياري، أصفر عند 80% منه، أحمر عند تجاوزه. اللون يجب أن يُرى من مسافة ثلاثة أمتار.

Kitchen ticket printers work. That is worth saying before any conversation about a Kitchen Display System. The problem is not that paper fails to deliver the order — it is that paper tells you nothing: how long did that dish take? Which station is falling behind? How many tickets went over ten minutes yesterday?
This guide answers two questions: does your kitchen actually need a KDS, and if so, how do you set it up so it improves service instead of becoming a screen the cooks ignore?
When you need a KDS
A screen earns its place if two or more of these apply:
You have more than one prep station (grill, fryer, cold, drinks, desserts).
Orders arrive from more than one channel: dine-in, takeaway, delivery, aggregators.
You hear "where is my order?" more than once a shift.
You cannot say what your average ticket time is today versus last month.

Course timing
Every item has a standard prep time. The goal is not to start everything together but to finish everything together. If the grill takes 12 minutes and the fries take 4, the fries fire 8 minutes after the grill.
Measure real times firstDon't use defaults. Time ten plates of each main item during a genuine rush and take the median, not the mean — one late plate distorts an average.
