Table Turnover Rate: How to Sell Each Seat One More Time a Night Without Rushing Guests

Your table turnover rate does not rise by pushing guests out — it rises by removing dead minutes nobody enjoys. Here is the formula, the stages, and the numbers.

Your table turnover rate is how many times each table is sold during a service, and it explains why two restaurants with the same chairs and the same menu can post completely different revenue. The good news is that raising it has nothing to do with hovering over guests with the bill. Most of the lost time sits in moments guests do not enjoy anyway: waiting for a server, waiting for the kitchen, waiting for the check.

This guide works through the formula with real numbers, introduces RevPASH — the metric that judges turnover fairly — and then walks the guest journey stage by stage to find where minutes leak. It closes with the cases where a long stay is the product itself, from fine dining to the Gulf family dinner that runs well past midnight.

How to calculate table turnover rate: formula and worked example

The formula is simple: parties served ÷ number of tables for a single service. Some operators count seats instead (covers ÷ seats). Either works, as long as you pick one and stick with it so that this week can be compared with last.

Example: a Riyadh restaurant with 15 tables and 60 seats serves dinner from 6 pm to midnight. On an ordinary night it seats 36 parties totalling 150 covers, at an average spend of SAR 85 per guest.

  • Table turns = 36 ÷ 15 = 2.4 turns for the dinner service.
  • Seat turns = 150 ÷ 60 = 2.5 turns.
  • Service revenue = 150 × 85 = SAR 12,750.
  • Average party size = 150 ÷ 36 ≈ 4.2 guests — a number you will need later when you review your table mix.

RevPASH: the metric that judges turnover fairly

Turnover on its own can mislead. A restaurant that turns tables four times on a small check may earn less than one that turns twice on a large one. That is why hospitality operators use revenue per available seat hour (RevPASH), which folds turnover and check average into a single number.

The formula: revenue ÷ (seats × service hours). In our example, 12,750 ÷ (60 × 6) = SAR 35.4 per seat per hour. That is the number you are actually trying to move. Turnover is one lever; the other is check average, which you work on through menu engineering.

Calculate it per hour, not per night. You will usually find that two or three hours carry most of the revenue while the rest stay soft. Soft hours need an offer or a different menu; strong hours are the only place where turnover deserves your effort.

Where the minutes go in the guest journey

Break the visit into stages and time each one with a wall clock for a week. The figures below are rules of thumb for a mid-range casual restaurant, not a published standard — their job is to help you compare your restaurant with itself.

StageTargetTypical when unmanagedWho controls it
Greet and seat2 min5–8 minHost and floor map
First contact and drinks order3 min7–10 minServer and section plan

Payment and close2 min5 minCard terminal and payment method
Clear and reset5 min10–15 minBussers and host
Time per stage: target versus what typically happens unmanaged (rule of thumb for casual dining)

Add up the gap between the two middle columns and you will easily find roughly 30 to 55 minutes per visit that have nothing to do with the guest's enjoyment. Those minutes are your only target. The eating and talking are what the guest came for, and any attempt to squeeze them shows up in reviews almost immediately.

Kitchen ticket time: the biggest single block

Kitchen delays build silently because nobody on the floor can see them. A kitchen display turns every order into a visible ticket in arrival order, so the head chef knows which table has waited too long before the guest raises a hand. Setup details are in the KDS setup guide. A useful rule: if mains tickets pass 20 minutes at peak, the problem is usually station balance or one slow dish, not cook speed.

Bill and payment: the minutes guests resent most

A guest who has finished and asked for the check is no longer enjoying anything; they are simply waiting. Bring the card terminal to the table with the bill, and train the team that a check request outranks taking a new order. A QR menu also removes the wait for menus and lets guests add items without flagging a server, as covered in QR code menus for restaurants. For payment options, see choosing a restaurant payment gateway.

Table mix: 2-tops, 4-tops, and the floor plan

The fastest way to lose turns is to seat two people at a four-top. Half the table is unsold at that moment, while a party of four stands at the door. So compare your real party-size mix with the tables you actually have.

  • Log party sizes for two weeks: what share of each service is pairs, fours, and large families?
  • Make 2-tops combinable: two deuces that become a four-top in a minute beat a fixed four-top holding a couple.
  • Give families a zone: in the Gulf a family often arrives six or more strong and expects a family section or some privacy; do not make them push tables together in the middle of the room.
  • Keep the floor map live: a map that shows occupied and free tables in real time stops the host seating a pair at the largest open table just because it is closest.

A useful companion metric here is seat efficiency: guests seated ÷ seats at occupied tables. As a rule of thumb rather than a fixed standard: if it is below 75% at peak, your problem is usually the table mix before it is service speed.

Reservation pacing and the walk-in waitlist

Accept twenty bookings at exactly 8 pm and you have built a peak the kitchen cannot absorb; ticket times rise for everyone. The fix is a house rule the host applies when taking bookings: pace reservations into slots every fifteen minutes and set yourself a cover cap per slot that you do not exceed, so pressure reaches the kitchen in steps.

Walk-ins should never be left at the door. Add them to the walk-in queue with their name and party size, give an honest time estimate, and when a table of the right size frees up, mark them notified and call or wave them over. The groundwork for this is in our restaurant reservation system guide.

Raising your table turnover rate in four weeks

  1. Measure the baselineCalculate turns and RevPASH for every service across a full week, and time each stage for a sample of at least 20 tables at peak.
  2. Pick the two biggest gapsCompare your numbers with the stage table above and choose only the two largest gaps. Trying to fix everything at once ends with fixing nothing.
  3. Fix the kitchen and the check firstTicket time and check time are usually the two biggest sources of dead time, and guests only experience the improvement as better service.
  4. Rework the table mixMatch your tables to your real party sizes, and make part of the room easy to combine and split.
  5. Pace bookings and run the waitlistHold yourself to a cover cap per time slot when accepting bookings, and add every walk-in to the waitlist instead of losing them at the door.
  6. Review weeklyRe-measure turns, RevPASH, and check average. If turns rise while check average falls, you have started rushing guests — step back.

What that can be worth: if a peak dinner runs 90 minutes plus a 10-minute reset, a table turns 1.8 times across a three-hour peak. Remove 12 minutes of dead time and it turns about 2.05 times. Across 15 tables that is roughly 3.7 extra parties; at our example's 4.2 guests per party that is about 15 extra covers, and at SAR 85 per guest around SAR 1,300 a night — provided there is someone waiting for the table in the first place.

When not to push turns

Not every restaurant wins by turning faster. In fine dining, in Gulf family dining, and across Ramadan evenings between iftar and suhoor, the long stay is the product. A guest who feels hurried does not come back, and does not recommend you to the rest of the family.

This is where RevPASH protects you from the wrong call. A family of six that sits for two and a half hours and spends SAR 900 earns 900 ÷ (6 × 2.5) = SAR 60 per occupied seat-hour. Compare like with like: a regular guest in our example spends SAR 85 over a 90-minute peak visit, or 85 ÷ 1.5 ≈ SAR 56.7 per occupied seat-hour. So the family costs you nothing despite staying almost twice as long — it earns slightly more for every hour a seat is filled. If the long stay comes with rounds of desserts, drinks, and Arabic coffee, it is an investment, not a loss.

Keep the numbers in one place

You cannot improve what you cannot see. When bookings live in a diary, kitchen orders on paper, and sales in the POS, turnover becomes a guess. In مطعمي the floor map, reservations, kitchen display, POS, and reports work together, so a table flips to "cleaning" the moment its bill closes, and order counts, party sizes, and revenue sit in your analytics dashboard, so you can work out turns and RevPASH without a paper log. It is one plan at $99 a year, and you can try it free for 30 days to compare your table turnover rate before and after the change.

Never sell your guest's time; sell the minutes they would have spent waiting.— An operating rule in front-of-house management

Frequently asked questions

What is a good table turnover rate?

There is no single number that fits everyone. Mid-range casual restaurants commonly turn tables two to three times over a dinner service, quick-service concepts far more, and fine dining fewer. What matters is comparing your restaurant with itself week on week, and judging the result by RevPASH rather than turns alone.

Does raising turnover mean rushing guests?

No. Most of the time you can save sits in stages guests do not enjoy: waiting to be seated, waiting for a server, a slow kitchen, and waiting for the check. Shorten those and leave eating and conversation untouched, and guests experience better service rather than pressure.

How do I calculate RevPASH?

Divide service revenue by seats multiplied by service hours. A 60-seat restaurant that takes SAR 12,750 over six hours earns SAR 35.4 per seat per hour. Calculate it hour by hour as well, so you can see which hours actually carry your revenue.

Does this apply to family restaurants in the Gulf?

Only to the stages the restaurant controls: seating speed, kitchen time, and the check. The length of the visit itself is part of the family experience, and when spend per head is high a long stay can earn more per seat hour than a fast turn would.

Do I need special software to measure turnover?

You can start with a clock and a sheet of paper for one week. For ongoing measurement it helps to have reservations, the floor map, and the POS in one place: in مطعمي a table flips to "cleaning" the moment its bill closes, and order counts, party sizes, and revenue sit in your reports, so you can work out turns and RevPASH without a paper log. Keep timing individual stages with a clock on a sample of tables.
