نقطة التعادل: كم يجب أن تبيع لتغطي يومك
نقطة التعادل = التكاليف الثابتة الشهرية ÷ نسبة الهامش المساهم، والهامش المساهم هو ما يبقى من كل ريال بعد التكاليف المتغيّرة. مطعم تكاليفه الثابتة 60,000 ريال وهامشه المساهم 40% يحتاج 150,000 ريال مبيعات ليصل إلى الصفر. معرفة هذا الرقم تحوّل السؤال من «هل الشهر جيد؟» إلى «كم يوماً بقي حتى نبدأ الربح؟».
المراجعة الشهرية التي تجعل الرقم يتحرّك

Three different margins — do not mix them up
Confusing the margins is the most common cause of bad pricing decisions. Gross margin measures what remains after ingredient cost alone. Operating margin also subtracts labour, rent, and fixed expenses. Net margin is what genuinely remains after everything, interest and depreciation included.

Why restaurant profit margin falls while sales rise
Delivery channel commissions: a 100-riyal order through a marketplace at 25% commission is not the same as a 100-riyal order in the dining room, and blending them in one report hides the loss.
